Manda’s Butterscotch Blondies
2 1/4 c. flour
1 tsp baking powder
1/2 tsp salt
1 c. butter
1 3/4 c. brown sugar, packed (1/2 light & 1/2 dark is good!)
2 lg. eggs
2 tsp vanilla
1 pkg. butterscotch chips
Preheat oven to 350. Butter & flour 13 x 9” pan.
Mix dry ingredients lightly with a whisk and set aside.
Cream butter and brown sugar until light and fluffy.
Beat in eggs 1 at a time until blended, add vanilla.
Slowly mix in dry ingredients until well blended scraping down
sides of bowl as needed. Stir in approx 3/4 package butterscotch chips.
Spread in pan, (batter will be thick) sprinkle with rest of butterscotch chips. Bake 30-35 mins.
While still hot, spread the hot butterscotch chips over the top.
Cool, cut and serve.
These are awesome heated up and served with a scoop of vanilla ice cream.
