Leela’s Mini Cherry Cheesecakes

16 Nilla wafers
3/4 c. sugar
2 (8 oz.) pkgs. cream cheese, softened
2 eggs
1 tbsp. lemon juice
The grated rind of one lemon
1/2 tsp. vanilla
1 can cherry pie filling
White chocolate chips

Place 16 cupcake liners (I like the silver ones!) in muffin pan with 1 wafer to each liner (this will be the ‘crust’).
Cream sugar and cream cheese. Add eggs. Blend in lemon juice and rind and then
vanilla. Pour over wafer in muffin pan until 1/2 to 2/3 full. Bake about 15
minutes at 375 degrees. Cool and top with 2 tablespoons of cherry
pie filling and a sprinkling of white chocolate chips. Refrigerate. PRETTY!
