Leela’s Luscious Lemon Squares

2 c. flour + 3 Tbs.
1 c. butter
1/2 c. sugar
5 eggs
2 c. sugar
Juice and rind of 3 lemons
1 Tbs. powdered sugar

Preheat oven to 350 degrees. In food processor fitted with steel blade, combine butter, 2 c. flour and sugar. Process until blended, about 15 seconds. Pat dough in an even layer into the bottom of a lightly greased 13 X 9 inch pan. Bake crust about 15 minutes, or until lightly golden brown.

In the same bowl of the food processor (don’t even bother to wash the thing out first) combine eggs, 3 Tbs. flour, 2 cups sugar, rind and juice. Pour lemon mixture over hot crust. Bake another 20-25 minutes or until just firm. Cool on a rack, dust with powdered sugar, cut into squares, makes about 24, depending on how you cut them. YUM!
